Custom crush is a practice by which an established winery helps a new winemaker by processing an amount of grapes for a short time each year. Miller says it is a mutually beneficial practice because it allows new wineries to maintain the quality and consistency that’s achieved with professional equipment typically not affordable for a start-up business. It’s a service Miller would like to offer once White Pine is able to process grapes at its own facility; he hopes to do this by 2015. Reflections of the climate When it comes to the wine, Miller says he “wanted to focus on a few things and do them really well rather than do a little bit of everything.” The aromatic whites that Miller says White Pine is known for—Pinot Grigio, Riesling and Traminette—have all been recognized several times over in various competitions. Dune Shadow Red, a Chambourcin/ Cabernet Franc/Merlot blend, brought home the double gold at the 2013 Michigan Wine and Spirits Competition. White Expression and Red Expression, both named to note that the flavor is an expression of the climate in which the grapes are grown, each won gold in the Tasters Guild International Wine Competition.
