{ Q&A Q. A. Certain reds are especially good when grown here, yes? When we do Pinot Noir here, it does equally as well but it’s different. You get more el-egance, fresher, juicier fruit and an overall difference of structure. … The wine in cool climate is much more elegant. The same goes for Cabernet Franc. You take Cab Franc and grow it in warm climate, and you can end up with a really nice red wine but, what I think you do is you lose the inherent character and personality of Cab Franc. It becomes a nice red wine, but where’s the distinction—here’s the real identity. Cab Franc, what you can do in my opinion, is you can ripen it past the point where you have the flavor profile and identity of that variety. And to me, the inherent descriptors you use for Cab Franc is raspberry, beautiful floral characteristics and a licorice quality to it in a cool climate. You retain all those flavors. In warm, you ripen it too much. Another thing that goes along with that fresh, juicy style of wine is the intensity of aromatics and flavors. Our wines smell a lot, in a very good way.
